Ingredients
2 cups Northwest Cherries®, pitted and halved
2 tsp balsamic vinegar
1 Tbs plus 2 tsp honey, more for drizzling (divided)
1 baguette bread, cut into 1/2-inch diagonal slices
1/4 cup extra virgin olive oil
2 cups ricotta cheese
1 tsp lemon zest, plus more for garnish
1/4 tsp salt
1/4 cup pistachios, chopped
fresh basil, for garnish
Directions
  1. In a bowl, combine the cherries, vinegar and 2 teaspoons of honey. Stir to coat cherries thoroughly. 
  2. Spread baguette slices onto a baking sheet. Brush with olive oil. Place under a broiler to toast for 1 to 2 minutes or until golden. Let cool. 
  3. In a bowl, stir together the ricotta, lemon zest, salt and 1 tablespoon of honey. Spread ricotta mixture over bread slices. Top with cherries, pistachios, extra honey and extra lemon zest. Garnish with basil.
